Bajavaria is a biergarten and restaurant in the Las Tunas neighbourhood of Todos Santos — a pub that reads as modern and old-world at once, built around a U-shaped bar small enough that conversation starts by itself. every material made in México, with the accessories and art assembled rather than ordered — pieces from the family’s own collection, flea-market finds, and work from México, the United States and, for a biergarten, Germany.That is a different discipline from specifying a restaurant package. There is no single supplier and no repeat order behind it; each piece has to be found, judged in the room it is going into, and made to sit alongside things bought decades apart on three continents.
